Popular Local Cuisine: The classic cuisine of Egypt is vegetarian with a special place for breads, particularly pita. Pita is served with nearly every meal and is the primary utensil for the locals. Many of the most popular dishes in Egpyt are variations of dishes found in the Middle East, Turkey and Greece. Koshari is a popular street dish with rice, lentils and pasta covered with a tomato sauce and fried onions. Ful medammis is spiced and mashed Fava beans which have been a staple of the area since pharaonic times. Dishes common throughout the Levant also found in Egypt include hummus (a spicy chickpea condiment), baba ghannoug (eggplant based condiment), stuffed grape leaves, kebabs of different varieties, falafel (fried bean balls) and kofti (fried meatballs). Grilled and fried fish are popular at restaurants along the coast. Konafa is a favorite dessert formed with strings of pastry filled with nuts and drizzled with syrup. Basbousa is a sweetened dense bread with syrup and nuts. Tea is the most popular beverage.
