Popular Local Cuisine: Georgia sits at the crossroad of Asia and Europe, Russian and the Southern Asia, but though influenced by the neighboring cultures, Georgian cuisine retains a unique culinary tradition that belies its geographic position. While grilled meats and kebabs are common they are often accompanied with unique sauces based on the traditional ingredients of walnuts, sour plums (tkemali), tarragon and coriander. Lobia soup is made with red beans and walnuts. Pkhali is a vegetable side-dish with herbs and walnuts. A nice snack is Acharuli Khachapuri, an egg and cheese sandwich shaped like an eye. Khinkali are the traditional dumplings stuffed with meat or cheese. Also using the ubiquitous walnuts is Kartopili Nigvzit. Stuffed eggplant and tomatoes normally skip the meats found in nearby countries and include the unique Georgian flavors. Mtsvane Pamidori are stewed green tomatoes. For a more hearty course try the Khashlama, a veal and sour plum stew.

Tarragon soda is a local favorite. For something a little sweet try Charkhlis Chogi, beets with cherry sauce. Wine-making in the region of Georgia goes back 7000-8000 years making it one of the oldest wine-making traditions in the world. Wines are named for their locality. The two most common varietals used are Saperavi (red) and Rkatsiteli (white), though more unique and ancient wines are also available.
