Popular Local Cuisine: Tuscan cuisine is noted for its simplicity and fresh ingredients provided from the local farms. The most typical Tuscan item (and one of my personal favorites) is the hearty soup known as ribollita, made with local vegetables, cannellini beans, and bread. Excellent meats, such as beef, pork and game are raised in the region. Smoked meats and sausage are more common in Tuscany than in other regions of Italy. Wild game meats, especially wild boar, are traditionally presented with pappardelle pasta. The local white truffles are used in risotto and other recipes. Tuscany produces some of finest olive oils in Italy and is home to the Chianti region. Bruschetta, grilled bread with olive oil and pungent mushroom or vegetable toppings, is a favorite appetizer.

Though Chianti is the most famous wine of the region it is not the only wine worth sampling. Most reds of the region are based on the noble Sangiovese grape which produces medium-bodied wines, some of which are excellent young and others which are best aged for a few years. Among the finest are Chianti Classico and Brunello di Montalcino. The Vernaccia of San Gimignano is a crisp local white.
