Popular Local Cuisine: Neapolitan cuisine is a blend rustic cooking from the surrounding volcanic countryside, the fisherman along the Bay of Naples and the cosmopolitan influences of often French rulers and nobles who dominated the politics of Campania until the late-19th Century. The most famous food item in Naples is certainly wood fired pizza and more specifically Pizza Margherita with its red, white and green celebration of Italian unity. On the streets tourists can pick up some other lesser known delights such as Taralli, a salty biscuit with black pepper. On the other end of the scale is the noble Sartu di Riso, a rice timbale filled with sausage, meatballs and vegetables. Pasta of many shapes are the basis for many Campanian main dishes including the fragrant Spaghetti Putanesca with a sauce featuring olives, capers, anchovies and tomatoes. The farmer's dish, Pasta e Fagioli, mixing pasta with beans and the local produce is a typical poor Neapolitan dish. Fresh salads built on endive and iceberg lettuces are a common accompaniment to meals.

Water buffalo mozzarella and several varieties of ricotta are the region's best known cheeses. The most common seafoods used in recipes are mussels, clams, red mullet and anchovies from the Bay of Naples and the larger region.

The leaf-like Sfogliatelle from Salerno is among the most popular pastries with its stuffing of sweetened ricotta or almond paste. Zeppola is the local doughnut with various fillings.

The most famous libation from the region is Limoncella, a simple spirit infused with local lemon zest. Less common is a similar liquore ai quattro frutti which is made with 4 different citrus varieties. The wines of the region are commonly based on grapes of thought to be of Greek origin, such as the aptly named Greco di Tufo. Lacryma Christi from the slopes of Vesuvius is white or red wine with grapes from the highly volcanic soil. Taurasi is a popular red wine from the nearby Avellino region.
