Popular Local Cuisine: Outside Italy, Italian cuisine is often viewed as a unified whole, but in fact each region offers a wide variety of its own specialties. Four of Romes famous specialties are pasta dishes. Bucatini alla Matriciana is large spaghetti-like pasta with a hole in the center and the sauce is based on tomatoes and red pepper with two favorite Roman ingredients, Pecorino Romano cheese and guanciale (cured pigs cheek). Spaghetti Cacio e Pepe is made with a sauce from the pasta water, percorino and black pepper - simple and delicious. Fetticine Alfredo (also known as al Burro) is a ribbon pasta with a creamy cheese sauce. Finally, there is Pasta Carbonara, which legend says resulted from the American troops of World War II's penchant for bacon and eggs. The sauce is made with eggs, guanciale (replacing the bacon) and pecorino.

In the Spring the most famous vegetable ingredient is artichokes made alla giudia (Jewish-style) or fried, and alla romana or baked with mint and garlic. Dishes made with the quinto quarto (sweetmeats and other less desirable remains from the butchershop) have become famous Roman dishes such as Coda alla Vaccinara (Oxtail Stew) and Tripa alla Romana (tripe in a tomato sauce). Flaky salt cod is fried for the famous Baccala. Saltimbocco (meaning jumps in the mouth) is a savory delight with veal and proscuitto spiced with sage.

On most menus the famous starter is Bruschetta, made most simply with fire toasted bread topped with olive oil and garlic, but sometimes with proscuitto ham, mozzarella cheese, basil or different spreads. On the street you can find the Suppli (fritters) such as suppli de telefono (fried rice ball with mozzarella). Roman style pizza is wood fire roasted with a super thin crust and sometimes topped with arugula.

Crostata di Ricotta is the local cheese cake. Local white wines such as Frascati and Castelli Romani are popular.
