Popular Local Cuisine: Ravenna is part of the Emilia-Romagna region of Italy, which is the heart of Northern Italy. While Americans are now enamored of Tuscan cuisine, many Italians look to this region as central to their food culture. The rich and flavorful foods on Northern Italy have their roots in the area and many famous local ingredients originated in Emilia-Romagna. Parma's proscuitto ham, Parmegiano-Reggiano cheese, Modela's balsamic vinegar and Bologna's mortadella have appeal that have justly made them world-renowned. On the streets of the region, food stands sell piadina, a flatbread, and squacquerone, a soft cheese, as a snack. Many of the region's pasta's are egg based. Tortelini and Lasagna have their roots in the area. World-famous meat sauce, Bolognese, is served over various pastas, has more meat than tomato and is known locally as Ragu. Grilled and sauteed greens, such as radicchio are a popular side dish. The most popular of desserts included zuppe inglese (custard with sponge cake and a spicy liqueur called Alchermesslia) and semi-freddo (a light ice cream).

A large portion of the wines produced in Emilia-Romanga are easy to drink table wines. However, the region is well-known for sparkling wines called spumante and frizzante. The most famous wine produced near Ravenna is the Albana di Romagna, an ancient white which varies considerably in quality, but at its best can be world-class.
