Popular Local Cuisine: Though related to the cuisine of Provence, Languedoc-Roussillon shows more Catalan and Arab influences in its spices such as saffron and cinnamon making it unique and intriguing. And the rugged terrain of the nearby Pyrenees offer hunted meats such as wild boar often seen on menus of the area. Perhaps the most iconic dish in the area is the local variation of Cassoulet, the pork and bean stew, often with other meats and sausages and spiced in the typical local style. Bourride is the Sete style fish stew with a spicy mayonnaise. Catalan Ollada, a pork soup is popular in the area. Gardiane is a beef stew with olives, bacon, garlic and vegetables. The shallow waters around Sete yield oysters, mussels, sardines and other fishes and slightly inland salt and rice are local products used in many dishes. Local olives are used to make the regional tapenade. In the spring asparagus is prevalent, Fresh truffles and wild mushrooms are a common flavors in many local dishes. Goat cheeses are the most popular from the area. Figs, peaches, apricots and cherries make the fall markets colorful. Lavender honey is a local product visitors may want to bring home.

Clafoutis is a local egg pudding often paired with black cherries.

Languedoc-Roussillon is France's largest wine-growing region, but long labored under the reputation as the producer of cheap table wines. In the last two decades however, they have developed more quality wines especially using the Syrah, Grenache, Carignan and Mourvedre grapes
